Chicken Maharani

 


Ingredients:-

For fried spices:-

2 tsp whole cumin
1 tsp whole coriander
1 tsp fennel
4-5 whole dried chillies

Preparation:-

In a pan, add whole cumin seeds, whole coriander seeds, fennel seeds, dried chillies and dry roast on medium to low flame. 

After 2-3 minutes, turn off the oven and pour the spices in another bowl. The spice should be cooled and powdered.

Gravy
Ingredients :-


Almond 10-12
Cashew nuts 10-12
Raw chilli 5-6
Yogurt 4 tbsp

Preparation:-

Almonds should be soaked in lukewarm water for 10-15 minutes and peeled. Cashew nuts should be soaked in lukewarm water for 10-15 minutes.

Mix almonds, cashews, raw chillies, sour yogurt, a little water to make a mixture.

Other ingredients:-

White oil 4-5 tbsp
Whole garam masala(Cardamom, Clove, Black Pepper, Cinnamon, mace(javitri))
2 Bay leaves
2 onions paste
Ginger paste 2 tsp
Garlic paste 2 tsp
Chicken 750 gm
Salt to taste
1/2 tbsp kashmiri red chilli powder
1 tbsp kasuri methi
2 tbsp fresh cream
Milk 1 cup





Method:-

  1.  Heat the pan and add 4-5 tbsp of white oil and add garam masala and bay leaves. Fry for 15-20seconds. 
  2.  Then add onion paste in it. Fry the onion in medium flame for 7-8 minutes. 
  3.  Add ginger garlic paste and stir for 2-3 minutes. 
  4.  Now add chicken. Stir in high flame for 10-15 minutes. 
  5.  Add salt to taste. 
  6.  Now add Kashmiri Red Chili Powder. 
  7.  Then add mixture of almond chilli curd. 
  8.  Pre-prepared fried spices should also be spread 1 tbsp. 
  9. Mix everything well. It will be cooked on medium flame while stirring. 
  10. After mixing well, it should be covered in low flame for 10 minutes. 
  11. After 10 minutes, if the spice is ready, you have to mix 1 cup of milk for gravy. 
  12. Cover with medium-low flame for 10-12 minutes. 
  13. After 10-12 minutes, open the lid and add 1/2 tsp garam masala powder, 1 tsp roasted kasuri methi. 
  14. At the end of it, you have to give 2 tbsp of fresh cream. 
Spread 1/2 teaspoon fried spices and turn off the oven.                     Ready.
