Veg Biryani: without onion and garlic

 There are probably very few people who don’t love to eat biryani. Today I have come up with a recipe that has become amazing with the help of basmati rice and some spices.

Veg Biryani

Ingredients:
• 5 Potatoes
• Ginger 1inch
• Green chilli
• Turmeric/yellow food color
• Kashmiri red chilli powder 2 tsp
• Biryani masala 4 tsp
• Powdered milk 4 tsp
• Milk 1/4 cup
• Saffron
• Mughlai mitha atar(sweet perfume)
• Rose water
• Keora water
• Potato bokhara(aloo bokhra).
For Rice:
• Basmati rice 500gm
• Cumin 1tsp
• Few peppers
• 4 Cardamom
• 4 cloves
• 2 bay leaves
• 1 lemon
• 1 cinnamon
• 1tbsp oil
• Salt tsp.

For gravy:
Mix ginger and chilli paste in a cup of water and strain it. Cut the potato in half and mix it with turmeric.
Heat four tablespoons of oil in a pan. When hot, fry the potatoes in it and mix it with ginger mixture and add Kashmiri Red Chili powder in it. Cover with 2 tablespoons of biryani spices, half a teaspoon of salt, 1 cup of water for 20 minutes. We have to see if the potatoes are cooked. The mixture should be left to pick up the potatoes. The mixture should be boiled in a high flame until the oil is released. Turn off the oven and let it cool.
1/4 cup of powdered milk is used to make a thick mixture with milk. Mix a little saffron, 1 drop of mitha atar, rose water 1 tsp and keora water 1 tsp in it. We will beat sour yogurt.
Mix 1 tsp of biryani spice in gravy with whipped sour yogurt. Mix it with 1-2 drop mitha atar,1tsp rose water,1tsp keora water. Mix it well with the potatoes. Potato Bokhara 5 should be given.

For rice:
Boil all the spices of rice and rice and 1 tablespoon of oil in water on high flame. Do not boil for a long time. Then strain the rice and spread it on the potatoes to make a layer. Mix 1 tsp biryani spice, 1 tsp ghee, milk saffron mixture from the top and keep it in the suppress for 20-25 minutes at low flame. You have to open the lid after 20 minutes. Turn off the oven for five minutes and leave with the lid on. Ready biryani without onion garlic.
